Parcel of salmon with shallots, green apples and chives
Peel the apple and dice into very small pieces. Peel the cucumber also, cut it in two lengthwise, remove the seeds and dice it also into very small pieces. Make sure the diced apple and cucumber pieces are of the same size. Put everything into a bowl and add a teaspoon of finely chopped shallots and chives. Season with pepper and a small pinch of salt. Add a large spoonful of sour cream and mix well together.
Spread a sheet of plastic film on your work surface and place on it a small slice of smoked salmon. Place a spoonful of the prepared mixture in the middle of the slice of salmon. Join the corners of the cellophane sheet and wrap it in a roll to get a ball of salmon filled with vegetable stuffing. Continue to roll until you get a nice little parcel. Using a knife, make a small slit in the sheet. Enlarge it a little to perfectly slide the salmon parcel out from the sheet. Serve on a plate decorated with a large spoon of sour cream seasoned with salt and pepper.
CHEF’S TIP
As an alternative to salmon, you can use tuna or smoked halibut,or beef carpaccio if you do not want to use fish.
